Raspberry Vinaigrette (WFPB, VEGAN)

This recipe contains simple ingredients, is simple to make and is simply nutritious and delicious! Especially good for beet salad made with spinach &/or arugula greens. Antioxidant-rich and a good source of omega-3 fatty-acids, this dressing also contains no-added-sugar and no processed/refined oils. Walnuts and water combine provide whole-food nutrition instead of refined oil. Fresh raspberries provide a natural source of antioxidants, vitamins, sweetness and flavor! Add organic lemon juice if you want to add a little extra "pop" to this dressing and have fun experimenting with different nuts if you don't like walnuts. Go nuts! ;)
Ingredients:
2 baskets raspberries, fresh*
1.25 cup water, filtered
1 cup walnuts, raw, soaked/softened*
1/2 cup balsamic vinegar*
2 tsp. coconut aminos*
1 tsp. salt
1/2 tsp. garlic powder*
1/2 tsp. onion powder*
*Organic if possible
Yield: ~ 3 cups (24 oz.)
Instructions:
1) Soak walnuts in boiling hot water for ~ 10 min, then discard the water (water a plant! :))
2) Place softened walnuts along with remaining ingredients in high-shear blender (VitaMix or comparable) & blend until smooth & creamy.
3) Fill into clean/sterile glass containers, refrigerate and enjoy!
